Pasta, White Beans, And Tuna Salad Recipe


Recipe Ingredients:

12 oz canned water-packed white meat tuna, drained, flaked
3 cups sliced fresh asparagus
1 1/2 cups canned white beans, drained, rinsed
8 large black olives, pitted, sliced
1/2 cup jarred diced roasted red pepper
6 cups cooked corkscrew pasta
=== DRESSING ===
1/3 cup balsamic vinegar
2 tbsp olive oil
2 tsp lemon juice
1 tbsp Dijon mustard
2 tbsp minced red onion
Salt, to taste
Freshly-ground black pepper, to taste

 

Recipe Instructions:

In a large salad bowl, add the tuna and set aside.

In a steamer basket set above 2 inches of boiling water, steam the asparagus for 4 to 5 minutes until tender. Drain and splash with cold water. Add to the tuna.

Add the remaining salad ingredients to the tuna and asparagus.

In a small bowl, whisk together the dressing ingredients. Add the dressing to the salad. Refrigerate for 1 hour. Pack into tupperware and place in the cooler.

This recipe yields 6 servings. Serving size: 1 cup.

Exchanges Per Serving: 3 1/2 Starch, 1 Vegetable, 2 Monounsaturated Fat, 2 Very Lean Meat.
