Pfeffernuss Recipe
Recipe Ingredients:
2 Eggs 1 cup Brown-sugar replacement 1/2 cup Granulated fructose 2 tsp Fresh lemon juice 2 cup All-purpose flour 2 tsp Ground cinnamon 1/2 tsp Baking soda 1/2 tsp Ground cardamom 1/2 tsp Ground nutmeg 1/2 tsp Ground cloves 1/4 tsp Salt 1/4 tsp Ground black pepper 1/4 tsp Ground blanched almonds Grated zest of 1 lemon
Recipe Instructions:
Combine eggs, brown-sugar replacement and fructose in a mixing bowl. Beat to blend for 10 full minutes. Beat in lemon juice. In a bowl, combine flour, cinnamon, baking soda cardamom, nutmeg, allspice, cloves, salt, and black pepper. Stir to mix. Gradually add flour mixture to egg mixture. Beat well after each addition. Add almonds and lemon zest. Stir to mix. Shape dough into balls, and place them on greased cookie sheets. Allow the balls to 'ripen overnight at room temperature. Bake at 350F. degrees for 15 minutes, or until cracks form in the tops. Move to cooling racks. Yield: 70 cookies.
