Pineapple Cream Tarts Recipe
Recipe Ingredients:
1 cup (8-oz can)crushed pineapple, -packed in fruit juice -undrained 1 package (4-serving)JELL-O sugar-free -vanilla cook & serve -pudding mix 1 package (4-serving)JELL-O sugar-free -lemon gelatin 1/2 cup Water 1 package (8-oz)Philadelphia Fat Free -Cream Cheese Sugar substitute to equal -2 tb sugar 1/2 tsp Coconut extract 1 (6-single serve)package -Keebler graham cracker -crusts 6 tbsp Cool Whip Lite 1 Maraschino cherry
Recipe Instructions:
In a medium saucepan, combine undrained pineapple, dry pudding mix, dry gelatin, and water. Cook over medium heat, stirring constantly, until mixture thickens and starts to boil. Remove from heat. Place pan on a wire rack and allow to cool completely. In a medium bowl, stir cream cheese with a spoon until soft. Stir in sugar substitute and coconut extract. Add cooled pineapple mixture. Mix gently, but thoroughly. Evenly spoon mixture into crusts. Top each with 1 tablespoon Cool Whip Lite. Cut cherry in half and each half into 3 pieces. Garnish each tart with a cherry piece. Refrigerate at least 1 hour.
Nutritional info: 1 serving = 197 calories, 5 gm fat, 12 gm protein, 26 gm carbohydrate, 545 mg sodium. Diabetic: 1 starch, 1 fat, 1/2 fruit, 1/2 meat.

Mary Ann's notes: Excellent (in fact, mouth-watering when I think of it). Needs no substitutions at all, but I may try using creme de mint flavoring instead of the coconut another time. Even if we are not dieting, most of us appreciate the chance to shave a few calories and fat. I would advise using a sugar substitute that does not leave a saccharin aftertaste. Of course, you could let the calories fly to the winds and just use normal ingredients just as well. This recipe could easily be doubled and served in squares. I'm even considering trying it on some other type of base.
