Pistachio Pudding Recipe
Recipe Ingredients:
1 package fat-free sugar-free pistachio pudding mix - (4-serv size) 2 cups skim milk 1 cup low-calorie whipped cream 3 macaroons, crushed 1 tsp green cream de menthe 2 tbsp toasted pistachio nuts
Recipe Instructions:
Prepare the pudding mix according to package directions using skim milk. Refrigerate to set.
When the pudding is set, mix the whipped cream with the macaroons and cream de menthe. Layer the pudding and whipped cream mixture in parfait glasses. Garnish each glass with nuts and serve.
This recipe yields 6 servings. Serving size: 1/2 cup.
