Pizza With Plum Tomato And Basil Recipe


Recipe Ingredients:

=== PIZZA ===
1 tbsp olive oil
1 premade pizza pie shell
1 cup Spicy Marina Sauce, (listed below)
1 cup grated low-fat mozzarella cheese
6 fresh basil leaves, thinly cut
3 plum tomatoes, thinly sliced
=== SPICY MARINARA SAUCE ===
2 tsp olive oil
1 tbsp minced garlic
1 cup thinly-sliced red bell pepper
1 cup thinly-sliced green bell pepper
1 tbsp minced jalapeño pepper
2 cans plum tomatoes - (28 oz ea)
2 tsp red pepper flakes
1/2 cup fresh basil leaves, chopped

 

Recipe Instructions:

Pizza: Preheat the oven to 425 degrees. If you are using a baking sheet, coat it with olive oil. (If you have a pizza stone, you can eliminate the olive oil. Simply place the stone in the oven to preheat it.)

Cover the top of the pizza pie shell with the Spicy Marinara Sauce. Sprinkle the cheese over the top so that it covers the sauce evenly. Sprinkle the basil evenly over the top. Place the plum tomatoes around the pizza.

Place the pizza in the oven (on a stone or baking sheet) and cook for 12 to 15 minutes, or until the pizza dough is firm and lightly browned. Remove from the oven and allow it to cool for 3 minutes before serving.

Spicy Marinara Sauce: Heat the olive oil in a large pot over medium heat. Add the garlic, red and green bell peppers, and jalapeño pepper. Cook until the vegetables are tender, about 5 to 7 minutes.

Drain the liquid from the canned tomatoes into the pot. Crush the plum tomatoes with your hand, then add them to the pot. Stir well to combinie, then bring the liquid to a simmer. Add the red pepper flakes and continue to simmer for 20 minutes.

Remove the pot from the heat, add the basil leaves, and mix well. Ready for use immediately or refrigerate for later use.

This recipe yields 6 servings. Serving size: 1 slice.
