Plum Tomato And Escarole Salad With Dressing Recipe
Recipe Ingredients:
2 cups escarole, washed and torn 2 cups romaine lettuce, washed and torn 2 cups bibb lettuce, torn 12 slices plum tomatoes 1/2 cup balsamic vinegar 1 tbsp olive oil 1 tbsp parmesan cheese 2 garlic cloves, minced 1 tbsp lemon juice 1/4 cup low-fat low-sodium chicken broth Salt, to taste Freshly-ground black pepper, to taste
Recipe Instructions:
In a salad bowl, combine the lettuces and tomatoes. Whisk together the remaining ingredients and toss with the salad.
This recipe yields 6 servings. Serving size: 1 cup.
