Pork Chops Cubano With Garlic-Citrus Sauce Recipe
Recipe Ingredients:
=== PORK CHOPS === 1 cup Fiber One cereal 1 tbsp finely-chopped fresh cilantro 2 tsp grated orange peel 1 tsp finely-chopped garlic 1 tsp onion powder 1 tsp dried oregano leaves 1 tsp ground cumin 1/4 tsp freshly-ground black pepper 4 pork loin chops, abt 1/2"-thick, (abt 1 1/2 lbs) 1/2 cup buttermilk === SAUCE === 2 tsp olive oil 1 tbsp finely-chopped garlic 1/4 cup lime juice 2 tbsp orange juice 2 tbsp chopped fresh cilantro
Recipe Instructions:
Heat oven to 400 degrees. Spray cookie sheet with cooking spray. Crush cereal. (Place cereal in plastic bag or between sheets of waxed paper; crush with rolling pin. Or crush in blender or food processor.)
Stir together cereal, cilantro, orange peel, garlic, onion powder, oregano, cumin and pepper in shallow dish. Dip pork chops into buttermilk; coat completely with cereal mixture. Place on cookie sheet.
Bake 25 to 30 minutes or until pork is slightly pink when cut near bone.
To prepare sauce, heat oil in 1-quart saucepan over medium heat. Cook garlic in oil about 1 minute or until golden, stirring occasionally. Stir in lime and orange juices. Heat to boiling, stirring occasionally. Remove from heat; stir in cilantro. Cover and refrigerate until serving time. Serve with pork chops.
