Pumpkin Cider Bread Recipe
Recipe Ingredients:
2 1/2 cups whole-wheat flour 2 tsp baking powder 1 tsp cinnamon 1/2 tsp nutmeg 2 eggs, beaten 1/2 cup unsweetened applesauce 1/4 cup sugar 1/2 cup apple cider 1/3 cup canned pumpkin = (not pumpkin pie filling)
Recipe Instructions:
Preheat the oven to 350 degrees.
In a medium bowl, combine the whole-wheat flour, baking powder, cinnamon, and nutmeg.
In a large bowl, combine the remaining ingredients. Add the dry ingredients slowly to the large bowl and mix until blended. Do not overbeat.
Pour the batter into a 9-inch loaf pan and bake for 40 minutes until the tester comes out clean.
This recipe yields 9 servings. Serving size: One 1-inch slice.
