Pumpkin Mousse Recipe
Recipe Ingredients:
2 cups canned pumpkin = (not pumpkin pie filling) 1 tbsp honey 2 tsp cinnamon 2 tsp grated lemon peel 1 cup part skim ricotta cheese
Recipe Instructions:
In a medium bowl, combine the pumpkin, honey, cinnamon, and lemon peel. Mix well. Fold in the ricotta cheese. Refrigerate for 1 hour and serve.
This recipe yields 6 servings. Serving size: 1/2 cup.
Exchanges Per Serving: 1 Starch.
