Pumpkin Pie 1 - Diet Recipe


Recipe Ingredients:

1 each 16 oz. can solid-pack pumokin - NOT PUMPKIN PIE FILLING
1 each 13 oz. can evaporated skim milk
1 each Egg or egg substitute equal to one egg
2 each Egg whites
1/2 cup Biscuit mix - Bisquick now makes low-fat version
2 tbsp Sugar
8 package Sugar substitute
2 tsp Pumpkin pie spice
2 tsp Vanilla extract

 

Recipe Instructions:

Heat oven to 350 degrees F. Lightly grease a 9 inch pie plate - or
spray with Pam. Place all ingredients in blender, food processor, or large
mixing bowl.
Blend 1 minute or beat 2 minutes with mixer. Pour into pie pan and bake
for 50 minutes or until center is puffed up.
Yield: 8 servings.
Exchanges = 1 1/2 bread.
