Quick Chili Recipe


Recipe Ingredients:

2 tsp olive oil
1 medium onion, chopped
1 small red pepper, chopped
4 garlic cloves, minced
1 lb lean pork tenderloin, trimmed, ground
= (your butcher will do this for you)
3 tbsp ground chili powder
1 tsp cinnamon
1/2 tsp allspice
2 cups canned tomatoes, undrained, and
coarsely chopped
2 cups low-sodium beef broth
1 tbsp red wine
1 tbsp Worcestershire sauce
Freshly-ground black pepper, to taste

 

Recipe Instructions:

In a stockpot over medium-high heat, heat the oil. Add the onion and pepper and saute for 5 minutes. Add the garlic and saute for 2 minutes. Add the pork and saute for 5 minutes.

Add the remaining ingredients and simmer over medium-low heat for 20 minutes.

This recipe yields 6 servings. Serving size: 1 cup.

Exchanges Per Serving: 2 Lean Meat, 1/2 Starch.
