Quick Italian Spinach Pie Recipe
Recipe Ingredients:
1 container Breakstone's or Knudsen lowfat cottage cheese 2% milkfat - (16 oz) 1 package frozen chopped spinach - (10 oz), thawed, and well drained 1 cup Kraft low-moisture part-skim mozzarella cheese 4 eggs, beaten 1 jar roasted red peppers - (7 oz), well drained, and chopped 1/3 cup Kraft 100% grated Parmesan cheese 1 tsp dried oregano leaves
Recipe Instructions:
Mix all ingredients. Pour into a greased 9-inch pie plate. Bake at 350 degrees for 40 minutes or until center is set.
This recipe yields 8 servings. Serving size: 1 slice.
Exchanges Per Serving: 1 Vegetable, 2 Meat.

Comments: This easy side dish is an excellent source of calcium and vitamin A. Substitute 1/2 cup chopped red bell pepper for roasted red pepper.
