Quick Turkey Salad Sandwich Recipe
Recipe Ingredients:
3/4 oz roasted turkey breast 1 tbsp fat-free sour cream 1 tsp reduced-fat mayonnaise 1/2 tbsp chopped red onion 1/4 tsp balsamic vinegar Salt, to taste Freshly-ground black pepper, to taste 1 pinch dried rosemary leaves = (or 1/4 tspn fresh rosemary) 1/2 oat bran English muffin, toasted
Recipe Instructions:
Cut the turkey into very small bite-sized pieces. Set aside.
In a small bowl, stir together the sour cream, mayonnaise, onion, vinegar, salt, pepper, and rosemary. Stir in the turkey.
Mound the mixture on an English muffin half.
This recipe yields 1 serving.
Exchanges Per Serving: 1 Starch, 1 Very Lean Meat.

Comments: Roasted turkey breast is wonderfully low in fat, but high in flavor. Here it's spiced up with red onion and balsamic vinegar.
