Red Pepper Hummus Recipe
Recipe Ingredients:
1/2 cup canned chickpeas, drained 2 roasted red peppers, see * Note 1 tbsp sesame tahini 2 tbsp plain low-fat yogurt 2 garlic cloves, minced 1 tbsp minced onion 1 dash cayene pepper Freshly-ground black pepper, to taste
Recipe Instructions:
* Note: Purchase roasted red peppers in a jar from the condiment aisle in the grocery store.
Combine the first three ingredients in a blender until smooth. Add the remaining ingredients and process until smooth.
This recipe yields 12 servings. Serving size: 2 tablespoons.
Exchanges Per Serving: 1 Vegetable.
