Roasted Potato Medley Recipe
Recipe Ingredients:
1 medium russet potato, cut 2" cubes 1 medium red potato, cut 2" cubes 1 medium sweet potato, cut 2" cubes 2 tbsp olive oil 2 tbsp balsamic vinegar 2 tsp minced thyme 3 garlic cloves, minced 1/4 cup low-sodium low-fat chicken broth
Recipe Instructions:
Preheat the oven to 375 degrees. In a bowl, combine all ingredients. Toss well to coat.
Place potatoes in a casserole dish. Roast uncovered for about 40 minutes, until potatoes are tender.
This recipe yields 6 servings. Serving size: 1/2 cup.
Exchanges Per Serving: 1 Starch, 1 Monounsaturated Fat.
