Salmon Loaf 2 Recipe
Recipe Ingredients:
nonstick vegetable cooking spray 1 can salmon, undrained (15 1/2-oz) 2 eggs, beaten 2 cups soft bread cubes, or 1/3 cup bread crumbs 2 tbsp fresh chopped parsley 1/8 tsp pepper 1 small onion, chopped 2 tbsp lemon juice
Recipe Instructions:
Preheat oven to 350 degrees. Generously spray an 8&1/2- by 2&1/2-inch loaf pan with vegetable spray.
In a large bowl, flake salmon, removing bones and skin. Add all remaining ingredients and mix well.
Press into loaf pan. Bake for 50 to 60 minutes or until golden brown and toothpick comes out clean.
Let stand 5 minutes. Loosen edges and lift out of pan onto serving platter. Cut into 4 slices.
4 servings/Serving size: 1 slice
