Shrimp Heroes Recipe
Recipe Ingredients:
1 lb cooked shrimp = (cut bite size if large) 1/2 cup finely-diced celery 1/4 cup finely-minced red onion 1/3 cup fat-free mayonnaise 1 tbsp minced fresh tarragon = (or 1 tspn crushed dried tarragon) 4 hero rolls 1 cup shredded lettuce 2 medium tomatoes, thinly sliced 1 medium green bell pepper, seeded, and thinly sliced crosswise into rings
Recipe Instructions:
In a large bowl, combine shrimp, celery, red onion, mayonnaise, and tarragon. Mix well.
Cut a lengthwise V-shaped section out of the top of the hero roll and set aside. Line the bottom of the roll with some of the shredded lettuce, tomato slices, and bell pepper slices. Top each with 1/4 of the shrimp mixture. Replace the top of the roll and cut the sandwich in half.
Serve immediately.
This recipe yields 4 servings.
