Soul Slaw Recipe
Recipe Ingredients:
1/2 cup reduced-fat mayonnaise 1/2 cup plain fat-free yogurt 1/4 cup apple cider vinegar 2 tsp sugar 2 tbsp Dijon mustard 1/8 tsp salt 1 tsp celery seeds Freshly-ground black pepper, to taste 1 large green cabbage head, julienned 2 medium carrots, raw, grated
Recipe Instructions:
Combine the mayonnaise, yogurt, vinegar, sugar, mustard, salt, celery seeds, and pepper in a small bowl and mix well.
Combine the cabbage and carrots in a large bowl. Add the dressing, toss well, and refrigerate for at least 1 hour before serving.
This recipe yields 8 servings. Serving size: 1 cup.
Exchanges Per Serving: 3 Vegetable, 1 Fat.
