Southern-Style Green Beans Recipe


Recipe Ingredients:

1 lb fresh green beans
2 1/2 cups water
2 tsp corn oil
2 reduced-sodium beef bouillon cubes
1/4 cup finely-diced onion
1/8 tsp salt

 

Recipe Instructions:

Remove strings from green beans, then break beans into bite-sized pieces. Wash beans and place in 2-quart pan. Add water, oil, bouillon cubes, and onion. Bring to a simmer.

Cove and cook for 30 minutes or until beans are tender when pierced with a fork; stir periodically. Add salt, stir, and continue cooking an additional 60 minutes most of the liquid should evaporate, and the beans should be very tender.

This recipe yields 6 servings. Serving size: 1/2 cup.

Exchanges Per Serving: 1 Vegetable, 1/2 Fat.
