Southwestern Sloppy Joes Recipe


Recipe Ingredients:

1 lb lean ground round
1 cup chopped onion
1/4 cup chopped celery
1/4 cup water
1 can diced tomatoes and green chilies - (10 oz), undrained
1 can no-salt-added tomato sauce - (8 oz)
4 tsp brown sugar
1/2 tsp ground cumin
1/4 tsp salt
9 whole-wheat hamburger buns

 

Recipe Instructions:

Heat large nonstick skillet over high heat. Add beef, onion, celery and water. Reduce heat to medium. Cook and stir 5 minutes or until meat is no longer pink. Drain fat.

Stir in tomatoes and green chilies, tomato sauce, brown sugar, cumin and salt; bring to a boil over high heat. Reduce heat; simmer 20 minutes or until mixture thickens. Serve on whole wheat buns. Garnish as desired.

This recipe yields 9 (1/3-cup) servings.

Exchanges Per Serving: 1 1/2 Starch, 1 Meat, 1 Vegetable.

Nutrition Facts: Calories 190; Calories from fat 19%; Total Fat 4g; Saturated Fat 1g; Protein 13g; Carbohydrates 26g; Cholesterol 15mg; Sodium 413mg; Dietary Fiber 1g.

Comments: Green chilies add some heat to these Sloppy Joes, but if you prefer them plain, just add an equal amount of tomatoes without chilies.

Health Note: Now you can have your beef and heart health, too. Just be sure the beef is lean. Beef is rich in nutrients so it packs a healthy dose of vitamins and minerals. Also, lean beef is a terrific source of iron, zinc and B vitamins.
