Spicy Corn Salsa Recipe
Recipe Ingredients:
2 cups corn kernels 1/4 cup diced ripe avocado 1/2 cup minced red onion 2 tbsp minced seeded tomato 2 tbsp minced jalapeño pepper 2 tbsp lime juice 2 tsp sugar 1 tbsp red wine vinegar
Recipe Instructions:
Combine all the ingredients in a medium-sized bowl. Cover and refrigerate for 1 hour.
Serve with low-fat baked corn chips, pita bread or as a condiment for grilled chicken, fish or beef.
This recipe yields 6 servings. Serving size: 1/2 cup.
