Spinach And Cheese Squares Recipe
Recipe Ingredients:
1/2 cup egg substitute = (or 2 eggs) 6 tbsp whole-wheat flour 1 package frozen chopped spinach - (10 oz), thawed, well drained 2 cups 1% low-fat cottage cheese 2 cups grated low-fat cheddar cheese 1/2 tsp freshly-ground black pepper 1/8 tsp cayenne, or to taste 1 pinch nutmeg, (optional) 3 tbsp wheat germ
Recipe Instructions:
In a large bowl, beat the egg substitute with the flour until the mixture is smooth.
Add the spinach, cheeses, cayenne and nutmeg, and mix the ingredients well. Pour mixture into a vegetable cooking spray-coated 13- by 9- by 2-inch baking pan.
Sprinkle the top with wheat germ and bake at 350 degrees for about 45 minutes.
Let stand for about 10 minutes and then cut into 1 1/2-inch squares for serving.
This recipe yields 18 servings. Serving size: 2 squares.
