Spinach Orange Salad Recipe
Recipe Ingredients:
=== DRESSING === 2 tbsp canola oil 3 tbsp orange juice 1 tbsp lemon juice 1 tsp grated orange peel Salt, to taste Freshly-ground black pepper, to taste === SALAD === 5 cups torn fresh spinach leaves, washed, dried 1/2 cup mandarin oranges in their own juice, drained 1/2 cup thinly-sliced dried apricots 1 small red onion, thinly sliced 1 tbsp toasted pine nuts
Recipe Instructions:
Whisk all dressing ingredients together and set aside.
In a large salad bowl, toss together the salad ingredients. Add the dressing and toss to coat. Serve immediately.
This recipe yields 6 servings. Serving size: 1 cup.
