Sweet & Sour Rice Salad Recipe
Recipe Ingredients:
3 cups cooked rice 1 cup corn, frozen or fresh 1 15 oz. can black beans, drained, rinsed 1/2 red bell pepper, chopped 1/2 green bell pepper, chopped 1 red onion, chopped 1 cup pineapple tidbits 2 tbs. Equal® sweetener 2 tbs. canola oil 2/3 cup vinegar salt, to taste
Recipe Instructions:
In large mixing bowl, combine rice, corn, beans, peppers, onion, and pineapple. In another bowl, whisk together sweetener, oil, and vinegar. Pour over rice mixture. Add salt to taste. Cover and chill several hours at least before serving.
Servings: 6
