Toasted Vegetable Baguette Recipe


Recipe Ingredients:

4 six-inch mini-baguettes, cut lengthwise
1 lb roasted vegetable salad, drained
1/4 cup chopped parsley
4 slices provolone cheese - (2 oz ea)

 

Recipe Instructions:

Preheat oven to 350 degrees.

Open each baguette and fill with vegetable salad. Sprinkle on 1/4 of parsley, and lay a slice of provolone cheese over the top. Close sandwich.

Place sandwiches on a baking sheet and bake for 5 minutes, until cheese melts.

This recipe yields 4 servings. Serving size: 1 baguette, 1/4 lb salad, 1 slice cheese.

Exchanges Per Serving: 2 Medium-Fat Meat, 2 Starch, 1 Saturated Fat, 1 Vegetable.

Nutrition Facts: Calories 388 Calories from Fat 153; Total Fat 17g; Saturated Fat 10g; Cholesterol 40mg; Sodium 884mg; Carbohydrate 38g; Dietary Fiber 2g; Sugars 3g; Protein 21g.
