Tomato, Basil, And Mozzarella Salad Recipe
Recipe Ingredients:
1 lb large very ripe tomatoes 2 oz shredded mozzarella cheese 8 fresh basil leaves 2 tsp olive oil 1 dash freshly-cracked black pepper
Recipe Instructions:
Slice tomatoes crosswise into 1/2-inch-thick slices, 4 slices per tomato. Arrange 2 to 3 slices on each salad plate. Sprinkle the mozzarella on top of each tomato.
Cut fresh basil leaves into strips and top each tomato with basil. Drizzle olive oil over the tops and add a dash of pepper. Enjoy!
This recipe yields 4 servings. Serving size: 2 to 3 slices tomato with topping.
Exchanges Per Serving: 1 Vegetable, 1/2 Medium Fat.
Nutrition Facts: Carbohydrates 6g; Protein 5g; Fat 4g; Calories 70; Fiber 1.9g; Sodium 76mg; Cholesterol 8mg.
Comments: Make this only in the summer or when you can get very large, red, rip tomatoes. (Use only 2 to 3 tomatoes here to make up the 1 pound.) It's one of our favorite summer salads and a great appetizer or part of an antipasto platter.
