Tomato & Onion Salad Recipe
Recipe Ingredients:
6 medium Tomatoes, wedged 4 Scallions, chopped 1 small Sweet onion, sliced 2 tbsp Cilantro, chopped 1 tsp Mint 1/4 cup Olive oil 3 tbsp Lemon juice 1 Garlic clove, crushed Salt & pepper Pita wedges
Recipe Instructions:
Combine tomatoes, scallions, onion, cilantro & mint. Whisk together oil, lemon juice, garlic, salt & pepper. Pour dressing over tomato mixture. Cover & chill. Serve with pita wedges. Alternatively, this salad makes a great topping for pita stuffed with falafel.
