Tri-Colored Rotini Salad Recipe
Recipe Ingredients:
=== SALAD === 2 cups cooked tri-colored rotini pasta 1/2 cup halved cherry tomatoes 1/4 cup diced red pepper 1 tbsp sliced black olives 1 can artichoke hearts - (15 oz), drained, halved === DRESSING === 1/4 cup balsamic vinegar 2 tsp olive oil 1 tbsp Dijon mustard 2 tsp minced fresh basil Freshly-ground black pepper, to taste
Recipe Instructions:
Combine all salad ingredients in a large bowl. Whisk together the dressing ingredients. Pour the dressing over the salad and toss to coat well. Serve at room temperature.
This recipe yields 6 servings. Serving size: 1/2 cup.
