Tropical Chicken Salad Recipe
Recipe Ingredients:
2 cups diced cooked chicken breast 2 cups diced fresh pineapple 1 cup mandarin oranges, drained 1/2 cup sliced celery 1/2 cup chopped fresh mango 1/4 cup sliced water chestnuts 1/4 cup low-fat mayonnaise 2 tbsp low-fat sour cream 1 tsp coconut extract Salt, to taste Freshly-ground black pepper, to taste
Recipe Instructions:
In a large bowl, combine the chicken, pineapple, oranges, celery, mango, and water chestnuts. Whisk together the mayonnaise, sour cream and extract, salt and pepper.
Pour dressing over chicken mixture and toss well.
This recipe yields 6 servings. Serving size: about 1 cup.
