Turkey Loaf - No.1 - Trish's Recipe
Recipe Ingredients:
1.50 lb Raw ground turkey 0.50 c Finely chopped celery 0.50 c Finely chopped onion 1.00 c Soft bread crumbs 1.00 ts Instant chicken bouillon 0.50 c Water 2.00 tb Chopped pimento Salt to taste 0.25 ts Pepper Fresh mushrooms or par- Boiled pearl onions
Recipe Instructions:
Combine turkey, celery, onion, bread crumbs and pimento. Dissolve the bouillon in the water; add to turkey mixture. Sprinkle on salt and pepper. Toss to mix. Turn half of mixture into a greased (or use vegetable spray) 9 x 5 x 3" loaf pan, spreading evenly. Arrange whole mushrooms, stem side down, in lenghtwise row on top - or use pearl onions. Spread remaining turkey mixture over mushrooms - or onions, pressing down firmly. Bake in oven at 350 degrees - from a cold start - for 50 to 60 minutes. Notes: Pimento can be left out. Dash or two of nutmeg can also be added. This recipe creates lot of moisture in the pan, so let cool for 10 minutes to firm up before removing from pan. Nutritional value using Meat Mate Food Analysis program - and using chicken as a basis (turkey not listed) - information is as follows: Per Serving: calories 201, protein 29 gr., fat 4 gm., carbohydrates 10 gm.
