Vichyssoise Recipe


Recipe Ingredients:

1.00 c Chicken broth or vegetable
-stock
1.00 md Potato; peeled and diced
2.00 c Milk, skim
0.25 ts Salt
Pepper tp taste
1.00 tb Ricotta cheese; part skim
1.00 ts Chives; chopped

 

Recipe Instructions:

In a blender or food processor fitted with a metal
blade process broth, potato and leeks until smooth.
Pour into a saucepan and cook until potato is tender,
about 15 min. Place remaining ingredients except
chives, in blender or food processor with cooked
vegetable mixture, and process again until snooth.
Chill before serving. Garnish with chives

Exchanges: 1 skim milk %fat = 14%
