West Indies Herb And Spice Baked Chicken Recipe
Recipe Ingredients:
Yogurt Mint Sauce, (see below) 6 boneless skinless chicken breast halves 1 tbsp minced garlic 1 tbsp lime juice 1 tsp olive oil 1/2 tsp dried thyme leaves 1/2 tsp ground nutmeg 1/2 tsp ground cinnamon 1/2 tsp freshly-ground black pepper 1/2 tsp ground allspice 1/2 tsp ground cloves === YOGURT MINT SAUCE === 1/2 cup plain nonfat yogurt 1 tbsp brown sugar 1 tbsp minced fresh mint leaves
Recipe Instructions:
Preheat oven to 400 degrees.
Prepare Yogurt Mint Sauce. Combine all ingredients in small bowl; mix well. (Makes 1/2 cup)
Spray jelly-roll pan with nonstick cooking spray. Place breasts on prepared pan. Combine garlic, lime juice, oil, thyme, nutmeg, cinnamon, pepper, allspice and cloves in small bowl; spread evenly over breasts.
Bake 15 minutes or until chicken is no longer pink in center. Serve with Yogurt Sauce.
This recipe yields 6 servings.
