Zucchini And Peppers Recipe
Recipe Ingredients:
1 1/2 cups zucchini slices 1 1/2 cups diced red pepper 1/2 cup diced onion 2 garlic cloves, minced 1 tbsp lemon juice 1 tsp olive oil 1 tsp chili powder 1/4 tsp oregano Freshly-ground black pepper, to taste 1 dash salt, (optional)
Recipe Instructions:
Steam together the zucchini, red pepper, onion, and garlic on top of boiling water, covered, for about 4 minutes. Drain.
Combine the lemon juice, oil, chili powder, oregano, pepper, and salt. Sprinkle over the cooked vegetables and serve.
This recipe yields 6 servings. Serving size: 1/2 cup.
